Beau McCallum’s food industry experience began in 1982 at Boomers Landing in Anacortes WA. The reason was he wanted to get the most expensive pair of wrestling shoes on the market. Mom came in and said “Go get a job!”. So he did. Washing dishes and doing little errands was fun and paid him the money he needed. Hank Thompson was the executive chef for GTM at the time and Beau really admired Hank as a professional and human being. Hank got Beau out of the kitchen and on the floor working with the public where he belonged. Beau started commercial fishing in 1985 where he made his less than pleasing debut as the boat’s cook. He learned a little but it was his next trip to Alaska on a commercial vessel where he learned his work ethic and a lot more from skipper Eric Thompson. 14 years of fishing and cooking with in the restaurant industry during the off-season would pay off later. Britain and Gail Walker started a catering company in Anacortes WA called Majestic Catering. Along with Roger Gerandt, Beau learned the bulk of his catering knowledge. In 1998 Beau reconnected with Britain and Gail Walker to work for Emerald Bay Events. Four months into the job Britain and Gail put Beau in a management position where he flourished. 9 years of catering to 2 to 14,000 people, managing events or display chef cooking, those were the days! Beau fed a lot of people food but his real success came from helping them plan their dreams and events. Today Beau is the owner of Cynergy Celebrations and invites you all to help us help you create your dreams and desires for those special occasions.

I am experienced in many adaptations of sound including: single speaker, corporate events, wedding vow enhancements, bands, multi-stage programs, festivals and concerts. Some festivals I’ve produced sound for are: Bellingham Boulevard Concert, Anacortes Arts Festival Series, Northwest Herbal Fair, Ski to Sea, Northwest Washington Fair (People’s Stage and Festival Stage), Weddings, and Parties.”

Gail Walker

Gail Walker began her cooking career in her mother’s kitchen at her grandmother’s knee. In her early teens her parents were separated and Gail began to prepare the family dinners. After graduating high school she joined the US Army and was stationed in Germany. She began catering parties for the officers and enlisted personal at 2nd General Hospital. After leaving the Army and returning home to Bellingham she opened “Memorable Occasions” and continued to cater and event plan in and around Bellingham.

She met Britain Walker while working in the medical industry and he at Chuckanut Catering.

After their divorces they opened the first mobile espresso bar in Hawaii, Java Joes, which is still in operation in Hilo, Hawaii. Coming back to Bellingham in 1995 they opened Emerald Bay Events a full service event planning and catering company. Gail was the head chef and kitchen manager at Emerald Bay.

She is the owner of “The Everyday Gourmet “a personal chef service where she specializes in low fat, low sugar meals less than 400 calories.

Britain Walker

Britain Walker began his career in the food and beverage industry at age 15 after his mother passed away. Britain knew that in order to eat he had to find a job in the food service.  After college at University of South Carolina he moved to St. Thomas VI and worked at Stouffer’s Grand Beach Resort.

Retuning to the states he worked at many large hotels as banquet manager, Beverage Manager and Food and Beverage Manager.  After moving to Bellingham in 1990 Britain became the face at Chuckanut Bay Catering and worked there for 4 years until moving to Hawaii with Gail.

Britain was the force behind Emerald Bay Events; with Beau McCallum’s help they grew the company into the largest independently owned catering company in the state. Food and friends are his life and he is happy to share a piece of the pie with you.
